Steak Salad Sundays Part 85: Thanksgiving leftovers ish steak salad

For the salad:
Butter lettuce
Sliced steak 
Sauteed green beans with toasted almonds 
Roasted candied sweet potatoes 
Croutons coated in Thanksgiving butter (butter recipe from @saratane )
Pomegranate seeds
Crumbled goat cheese 
Cranberry @boursincheese vinaigrette

Cranberry Boursin vinaigrette
¼ cup olive oil
1 tbsp white wine vinegar
1 tsp fresh parsley, chopped
1 tsp fresh chives, chopped
2 cloves garlic, minced
1 tsp dijon mustard
1.5 tbsp cranberry sauce 
1 tbsp Boursin cheese 
Salt and pepper, to taste

For the croutons:
I cubed up some ciabatta and tossed with salt, pepper, thyme, sage, and @saratane ’s Thanksgiving radish butter (I took out the radishes). Roast for about 10 minutes at 400 F (or until desired crispiness), stirring after a few minutes so that once the butter melts you can coat every piece of bread. 

Roasted candied sweet potatoes:
I peeled and cubed my sweet potatoes. I coated in a little olive oil, brown sugar, cinnamon, pumpkin spice, and salt and roasted for about 35 minutes at 400 F, stirring halfway through. They should be slightly browning on edges, and tender on the inside. 

Green beans:
I toasted up some almonds over dry heat (about 5 minutes on low, stirring frequently) until they start to brown. Set aside. In same pan, add a little olive oil and butter. Add your trimmed green beans and saute for a few minutes over medium heat. Add minced garlic, and any herbs you like (I used sage, rosemary, thyme, and salt). Saute for about 7-8 minutes, add your almonds, and remove from heat. I like my green beans crisp so if you prefer them softer, you can always blanch first, or cook with lid on to help steam them.
