My favorite part of Thanksgiving is the sides 🍯✨ I made these sweet potato rounds finished with whipped goat cheese, candied bacon, & pomegranate seeds for friendsgiving this year and they were a hit!— Here’s the recipe ⤵️

Ingredients:
4 large skinned sweet potatoes, sliced into ¼” rounds
8 pieces thick-cut bacon
5 cloves garlic, minced
1 shallot, chopped
¼ cup olive oil
2 Tbsp Honey Brown Sugar Seasoning from @walmart 
8 oz goat cheese
3 oz cream cheese
3-4 Tbsp milk (more as needed)
¼ cup toasted pecans, chopped
1/8th cup Pomegranate seeds, to top

Method:

Preheat the oven to 400°F and line a baking sheet with parchment paper. Lay out thick cut bacon in a single layer and sprinkle generously with about 1/2 Tbsp Honey Brown Sugar seasoning on both sides. Roast for 18–22 minutes, until crisp. Remove and place on paper towels to drain.  Then rough chop into pieces.

Peel and cut your sweet potatoes. Toss sweet potato slices in olive oil, 1.5 Tbsp Honey Brown Sugar seasoning, garlic, and shallot. Lay out flat on a baking sheet covered with parchment paper. Ensure rounds are flat and not overlapping. You may need two baking sheets. Roast sweet potatoes at 425°F for 35–40 minutes until tender and slightly crisp, flipping halfway through.

While potatoes are roasting, prepare the whipped goat cheese. Blend 8 oz goat cheese, 3 tbsp cream cheese, and 3 tablespoons of milk (plus a drizzle of olive oil) in a food processor until smooth and fluffy. Add more milk as needed to get to whipped consistency.

Toast pecans in a dry skillet over medium heat for 4–6 minutes, stirring often until golden. Once cool, roughly chop.

When sweet potatoes are done baking, top with a dollop of whipped goat cheese, bacon bits, pecans, and pomegranate seeds. I put the whipped goat cheese into a plastic bag and cut off the tip for a makeshift piping bag. Enjoy!
