## Caption

Soup Series Episode 2: Roasted butternut squash soup with a prosciutto grilled cheese made with @chosenfoods 100% pure avocado oil and mayo #ChosenPartner

Ingredients:
1 medium butternut squash, peeled, seeded, and sliced into rounds 
1 sweet potato, peeled and sliced into rounds
2 carrots, peeled and roughly chopped into larger pieces 
1 onion, roughly quartered 
1 bell pepper, seeded and roughly sliced into larger pieces 
1 whole garlic bulb, top sliced off
4 tbsp @chosenfoods 100% pure avocado oil
2 tsp salt
2 tsp onion powder
2 tsp garlic powder
1 tsp paprika
1 tsp dried thyme
½ tsp black pepper
4 cups vegetable stock (or more to adjust thickness as desired)
1/3 cup heavy cream 
Fresh thyme, pumpkin seeds, crushed red pepper flakes, and splash of cream to garnish 

For the grilled cheese:
Bread of choice
Cheese of choice (I used cheddar and shredded gruyere)
Prosciutto
@chosenfoods mayo 

Instructions:
-Preheat oven to 400°F. 
-Prep your veggies and toss with @chosenfoods 100% pure avocado oil and seasonings. Lay out in a single layer on two baking sheets. Roast about 45 minutes, stirring once halfway, until tender and lightly caramelized.The smaller you chop the veggies, the less time they will take to roast so adjust accordingly 
-In a large soup pot, squeeze garlic out of the bulb and add your roasted veggies. Set heat to low. Add 4 cups vegetable stock. Use an immersion blender to blend until smooth. You can also add the veggies and stock to a blender to blend first before transferring to a pot. Stir in heavy cream and adjust seasoning as needed. 
-Cover and let heat up for about 5-10 minutes before serving.When serving, I like to add a drizzle of heavy cream, crushed red pepper flakes, fresh thyme, and pumpkin seeds. 

For the grilled cheese:
-Coat one side of each piece of bread with a thin layer of @chosenfoods mayo 
-In a skillet over medium/low heat, add one slice of bread mayo down. Add cheese and prosciutto before placing the second slice mayo side up. 
-Cook about 3–4 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.
