#BlackLabelBaconPartner Steak Salad Sundays Part 83: Jalapeño popper inspired steak salad ft. @blacklabelbacon for the perfect smoky crunch.

For the salad:
Romaine
@blacklabelbacon wrapped jalapeño popper
Sliced steak
Cherry tomatoes, halved
Avocado, sliced
Red onion, thinly sliced
Crumbled @blacklabelbacon 
Cheddar cheese, shredded
Jalapeño ranch

Jalapeño ranch:
¼ cup mayo
¼ cup greek yogurt
1 tbsp buttermilk
1 tbsp fresh dill
1 tbsp fresh green onion
1 tbsp fresh cilantro
½ to 1 jalapeño, depending on spice preference
2 cloves garlic
Juice ½ lime
Additional buttermilk (if needed)
Method: Add all ingredients to a blender and blend until mixed. You can also use an immersion blender. I like to taste test and add in additional buttermilk as needed to get to desired consistency.

Jalapeño Poppers:
4 fresh jalapeños
4 oz cream cheese (softened)
2 oz shredded cheddar cheese
Seasonings of choice (I used a little salt, pepper, garlic powder, onion powder)
2 tbsp chives, diced
4 slices @blacklabelbacon 
Toothpicks

Method:
-Prep the jalapeños: Trim stem (keep calyx intact as this will hold in the cheese filling), slice in half lengthwise, and remove seeds. Make sure you keep the halves of each jalapeño together for reassembly.
-Make cheese filling: Combine cream cheese, cheddar cheese, seasonings, and chives in a bowl and mix well.
-Fill jalapeños: Fill each side of the jalapeño with the filling. Press the two halves back together to reform the whole pepper. Be sure to not overfill as you will want the pepper to fit back together perfectly. This will help prevent cheese from spilling out on the grill.
-Wrap: Wrap each pepper with @blacklabelbacon , starting at the stem end. Try not to overlap the bacon too much so it cooks evenly and crisps up. Secure with toothpicks so bacon stays in place.
-Cook: Preheat the grill to 325°F. Cook poppers over indirect heat for about 45 minutes, turning occasionally. Bacon will slowly render and crisp while the peppers soften gently. If you want extra-crisp bacon, move briefly over direct heat at the end.
