Cocktail of the Week Part 2: Apricot Pisco Sour 

Ingredients:
2 oz Pisco
3/4 oz lime juice
1 oz apricot syrup
1 egg white
A few dashes of bitters
Ice 

Method:
Add the pisco, lime juice, syrup, and egg white to a cocktail shaker. Shake vigorously without ice to create a rich, foamy texture. Add ice and shake again until well chilled.

Strain through a fine-mesh strainer into a cute cocktail glass. Garnish with a few drops of bitters, then drag a cocktail pick or toothpick through the drops to form heart shapes.

For the syrup:
In a small saucepan, combine 1 cup sugar, 2 diced apricots, and 1½ cups water. Bring to a gentle simmer, stirring occasionally, and cook for about 15 minutes, or until the fruit is very soft and the liquid has slightly thickened.
Remove from heat and strain the syrup through a fine mesh sieve or cheesecloth, pressing on the solids to extract as much flavor as possible. Discard the solids. Allow the syrup to cool completely before using, especially if adding to drinks with egg white. Transfer to a clean, airtight jar and refrigerate for up to 2 weeks.
