Steak Salad Sundays Part 70: Lettuce free steak salad for my lettuce h8ers

For the salad:
Grilled veggie medley (zucchini, yellow squash, white squash, red onion, cherry tomatoes)
Sliced steak
Toasted almonds 
Crumbled queso fresco
Fresh dill sprigs, for garnish 
Calabrian chili chimichurri inspired dressing

Calabrian chili chimichurri inspired dressing:
1/2  cup olive oil
2 tbsp white wine vinegar
1 tbsp honey
3 cloves garlic
1 tbsp calabrian chilis
Juice of 1/2 lemon
1/4 cup parsley
1/4 cup cilantro
1/4 cup chives
Salt and pepper, to taste
*Add all ingredients to a jar and use an immersion blender to blend until a nice smooth consistency. 

I like to grill my veggies up in a grill basket! I coat with a little olive oil and seasonings. For this one, I used @kindersflavors garlic, salt, and pepper blend. I start with the onions and peppers and grill for about 8-10 minutes on med/high heat, mixing every so often. Then add the squash and tomatoes and grill for another 8-10 minutes. Grill basket is @cuisinart 

Rib eye cooked to about 125-130 internal temp.
