Steak Salad Sundays Part 66: Fried pickle steak caesar salad

For the salad:
Romaine, chopped
Sliced steak 
Shaved parmesan
Toasted breadcrumbs with pickle seasoning 
Fried pickles (grillospickles 
Pickle chips (kettlebrand)
Pickle caesar dressing

Toasted bread crumbs: I toasted some panko bread crumbs in a little bit of olive oil with pickle seasoning (I got this from Trader Joes). Saute on low, stirring frequently until golden brown. 

Fried pickles: I mixed together flour, pickle seasoning, pickle brine, and 805beer . I sort of eyeballed the ratios but started with 1 cup of flour and adjusted the beer to flour ratio until i got to a nice thick batter that was able to stick on my pickles. Pat pickles dry before dipping in batter. Fry up in some avocado oil over medium heat for a few minutes a side, or until golden brown. I used Grillo’s pickles because they are my favorite and nice and thick so the structure holds. 

Pickle caesar dressing:
1/2 cup mayo
1.5 tbsp dijon mustard
2 cloves garlic, minced
Juice of 1/4 lemon
1 tsp anchovy paste
A few dashes of worcestershire sauce 
1/4 cup grated parmesan 
2 tsp pickle brine
1 tbsp fresh dill, chopped
Salt and pepper to taste
2-4 tbsp olive oil, as needed (start with 2 and add more to get to consistency you like)
