Let sit for at least 30 minutes. Marinated tomatoes: I added about 30 halved heirloom cherry tomatoes to a bowl with a little bit of olive oil, splash of red wine vinegar, juice of ½ lemon, 1 sliced shallot, 3 minced garlic cloves, 1 tbsp chopped calabrian chilis, 1 tsp salt, ½ tsp black pepper, 1 tsp italian seasonings. Mix well. Roasted red pepper whipped feta: Blend up 1 block of feta, 1 roasted red pepper, 2 cloves garlic, juice of ½ lemon, salt and pepper to taste. Blend up until nice and creamy.
