When  my son Luke, who went to college in Cincinnati, arrived at school freshman year, he immediately started telling us about how good Raising Canes Chicken is…  At the time we didn’t have any restaurants near us so we had never tried it so I did a little research and came up with a recipe.  I made it for him one visit home from school and he gave it his seal of approval… and I haven’t stopped making it ever since

Raising Cane’s Chicken

2 lbs boneless chicken breast cut into strips

Wet:
2 cups buttermilk
2 tbls pickle juice 
2 tbls hot sauce 
2 tbsp garlic powder
1 tsp pepper
1/2 tsp salt 
1 tbls smoked paprika

Dry:
2 cups all-purpose flour
3 tbls cornstarch
1/2 tsp salt 
1 tsp pepper 
1 tbls garlic powder
1 tsp smoked paprika

Cane’s Sauce:
1 cup mayonnaise
1/3 cup ketchup
2 tbsp Worcestershire sauce
1 tbsp garlic powder
1 tsp black pepper
1/2 tsp salt 
1 tsp smoked paprika

Whisk together the wet batter ingredients.  Add the chicken and marinate for at least 2 hours or overnight.
Whisk together the dry ingredients. 
Remove the chicken from the wet batter, let the excess drip off, then coat each strip in the dry batter.
Fry each coated strip in hot oil (until it gets to about 350°F) until golden and cooked through. I cooked the pieces for about 8-10 minutes turning them halfway through.  I used vegetable oil but feel free to use whatever oil you prefer. 
Whisk together the sauce ingredients and serve with the chicken.
