Growing up in LA, there were 2 iconic restaurants that made similar Italian chopped salads,  La Scala & cpk California Pizza Kitchen! I loved them both so much so I married the two for this week’s salad meal prep!

We get so many questions about what blender we use, this is beasthealth new Stainless Steel Blender that is so fantastic for salad dressings!

Nancy’s Chopped Italian Salad
1/2 head iceberg lettuce, chopped
1/2 head romaine lettuce, chopped
Roasted turkey, julienned
Salami, julienned
1 pint grape tomatoes, sliced
1 can garbanzo beans, drained + rinsed
1–2 tsp olive oil
Salt + pepper, to taste
1/2 tsp dried oregano
Shredded mozzarella, to taste

DRESSING
1/2 cup mayo
1/3 cup olive oil
Juice of 2 lemons
2 tbsp red wine vinegar
1–1 1/2 tbsp Dijon mustard
5 garlic cloves
2 tbsp capers
4–6 anchovy fillets
1/4 cup fresh chives
1/4 cup fresh basil
1/4 cup fresh dill
1/2 cup fresh parsley
Salt + pepper, to taste
1–3 tbsp cold water, as needed

DIRECTIONS

Toss the garbanzo beans with olive oil, salt, pepper, and oregano.

Add all dressing ingredients to a blender or food processor and blend until smooth and creamy. Adjust to taste with more lemon, anchovy, capers, or a splash of water if needed.

In a large bowl, add the chopped iceberg, chopped romaine, julienned turkey, julienned salami, sliced grape tomatoes, seasoned garbanzo beans, and shredded mozzarella.

Toss with the dressing and portion for meal prep all week.  #salad #saladdressing #beasthealthpartner #mealprep #workfromhome
