Slow-Roasted Garlic & Rosemary Lamb with Crispy Potato Spears 

Many people are asking about this 17 inch cast-iron pan, so we linked it in our bio. It is perfect for big family holiday gatherings! We got it surlatable 

Ingredients:
6 lb bone-in leg of lamb rainshadowmeats 
3 tbsp olive oil, 2 tsp salt, 2 tsp pepper, 10 garlic cloves (sliced), 2–3 rosemary sprigs

Juice of 2 large lemons, ½ cup olive oil, 1 tbsp Dijon mustard (optional), 2 tsp salt, 1 tsp pepper, 1 tbsp dried oregano, 1 tsp garlic powder, 1 tsp onion powder, 1 tbsp chicken stock paste, 2 cups water, 1/4 cup of white wine (optional)

4–5 large russet potatoes (peeled, cut into spears), 6–8 garlic cloves (smashed), 1–2 tsp paprika, 1 tsp garlic powder, 2 tbsp olive oil, salt, pepper

Optional: add sliced grape tomatoes, florets of fresh dill / rosemary, & grilled halloumi cheese on top of the potatoes before serving 

Method:
Make small cuts all over the lamb and tuck in slices of garlic and bits of rosemary. Drizzle with olive oil and season well on all sides with salt and pepper, then place in a 17” cast iron pan.

Whisk together the lemon juice, olive oil, mustard (if using), seasonings, stock paste, and water. Pour around the lamb. Cover with parchment and foil, then roast at 350°F for about 3 hours until very tender.

Remove from the oven, add the potato spears and smashed garlic to the pan, and season them with paprika, garlic powder, olive oil, salt, and pepper. Toss everything in the pan juices.

Return uncovered at 425°F for about 45 minutes, until the potatoes are soft inside, crisp on the edges, and the lamb is nicely browned.

Let the lamb rest briefly, then slice and serve with the potatoes and pan juices.
