## Caption

This dish has become a center piece for our family gatherings. Our daughter wanted it for her birthday, our son wanted it as his farewell meal before going back to college, and we wanted it for meal prep!. From one of our favorite chefs, cocolarkincooks she’s a genius! This is our slightly adapted version of her Hachis Parmentier recipe.

Cottage Pie
• 5 lbs beef chuck steak, cut into 2” pieces
• 4 tbsp butter, 2 tbsp olive oil, salt
• 3 carrots, 4 celery stalks, ½ red onion, rough chopped
• 1 bottle red wine, 3 cups beef broth
• 2 heads garlic, halved
• Rosemary + thyme, tied

Ingredients – Veg & Sauce
• 3 tbsp olive oil
• 1 large yellow onion, 3 carrots & 5 celery stalks, diced
• 10 cloves garlic, minced
• 3–4 tbsp tomato paste, salt
• 4 tbsp melted butter + 4 tbsp flour (don’t prep until Step 6)

Ingredients – Potatoes
• 8 lbs russet potatoes, peeled, 1/4… heavily salted water
• 2–3 cups milk, 6 tbsp butter, 1 cup Gruyère, ½ cup Parmesan

Directions
	1.	Season beef liberally with maldonsalt salt & pepper, brown in a searing hot Dutch oven with butter & oil, remove.
	2.	Add in chopped carrots, celery, onion in same pot for 3-4 minutes. Return beef, add wine, broth, garlic heads, and tied herbs. Cover, cook at 325°F ~3 hrs. Until meat falls apart.
	3.	Boil potatoes until tender, drain, steam dry w/tea towels for 5 mins. Run them through a ricer (if you have) or mash them… fold in milk, butter, ½ cup Gruyère.
	4.	Heat oil in 17” skillet, cook diced onion, carrots, celery until soft. Add garlic & tomato paste, mixed combine. Turn off heat.
	5.	Shred beef by hand once cooled, add to skillet, turn heat back on low.
	6.	Strain braising liquid into pan, bring to low simmer, make a slurry w/ butter & flour, stir in and season. This will thicken it.
	7.	Spoon mashed potatoes over beef, this time we piped it in for fun and it turned out so well! Sprinkle remaining Gruyère & Parmesan cross the top.
	8.	Bake 400°F ~30 min, broil a few min to brown top, keep a close eye on it… rest 10-15 min before serving. Top of chives if you like.
