Every once in a while, one of my patients shows up with home-cooked food or delicacies from there business as a thank you and I’m always so grateful! I happen to love paella, so this was the perfect reason to make it! The pan is from smitheyironware 

EASY  PAELLA 

Ingredients
• 1/4 cup extra virgin olive oil garciadelacruzoliveoil 
• 1 onion, diced
• 1 bell pepper, diced 
• 4 cloves garlic, minced
• 3 Roma tomatoes, very finely diced (or 8 oz tomato sauce)
• 1 bay leaf
• 1 tsp paprika (sweet or smoked)
• Pinch saffron threads, ground + bloomed in broth
• Salt & pepper, to taste
• 1/4 cup white wine
• 4 chorizo sausages
• 1/4 cup fresh parsley, chopped (divided)
• 2 cups bomba rice  matiz_foods 
• 5 cups chicken broth
• 1/2 cup frozen peas
• 1/2 lb jumbo shrimp/prawns (peeled, tail on)
• 1/2 lb mussels (cleaned, debearded)
• 8 oz calamari rings
• Lemon wedges, for garnish

Instructions
	1.	Heat olive oil in a wide skillet over medium heat. Add onion, bell pepper, and garlic. Cook until onion is soft and translucent.
	2.	Stir in tomatoes, bay leaf, paprika, saffron, salt, and pepper. Cook 5 minutes. Add white wine and simmer about 10 minutes. Taste and adjust salt.
	3.	Add 2 tbsp parsley and the rice. Stir to coat and toast for 1 minute.
	4.	Pour broth evenly around the pan and gently shake to level the rice. Do not stir from this point on.
	5.	Bring to a boil, then reduce heat to medium-low. Let cook uncovered for 15–18 minutes, giving the pan a gentle shake once or twice (no stirring—this helps form that crispy socarrat).
	6.	Nestle in chorizo, shrimp, mussels, and calamari. Sprinkle peas on top. Cook another 5 minutes, until most liquid is absorbed and rice is nearly tender.
	7.	Remove from heat, cover with lid or foil, and rest 10 minutes (add a towel over the lid for best results).
	8.	Garnish with lemon wedges and remaining parsley. Enjoy! 🍋✨
