## Caption

We get so many question about our 16” cast-iron pan and we use it in this video for the meatballs!! It is from fieldcompany! We love the quality of cast iron pans from them!  What should we make in it next? 

Swedish-Style Meatballs w/ Pomme Purée

MEATBALLS
•	1/2 sweet onion, finely chopped
•	1 tsp olive oil
•	1 lb ground pork 
•. 1 lb ground beef
•	1 cup cubed bread (white or other)
•	1/2 cup whole milk
•	2 eggs
•	1/4 cup parmesan, grated
•	2 tbsp fresh parsley, chopped
•	1/2 tsp cardamom
•	1/2 tsp nutmeg
•	1/4 tsp allspice
•	1 tsp garlic powder
•	1 1/2 tsp kosher salt
•	1/4 tsp black pepper
•	Neutral oil, for frying

SAUCE
•	4 tbsp butter
•	3 tbsp flour
•	2 cups beef broth
•	1 cup heavy cream
•	1 tbsp Worcestershire sauce
•	1 tsp Dijon mustard
•	Salt and pepper, to taste

MEATBALLS

Sauté the onion in a little butter (1-2 tbsp) and 2 tbsp olive oil over medium heat until just translucent, about 2 minutes. Remove from heat and let cool slightly.

In a large bowl, combine torn potato rolls and milk. Let soak for 1–2 minutes, then gently mash with a fork. Add the ground meat, eggs, sautéed onion, parsley, spices, garlic powder, salt, and pepper. Mix gently just until combined.

Form medium-sized meatballs.

Heat a large skillet over medium-high heat and add a thin layer of neutral oil. Working in batches, sear the meatballs on all sides until well browned and cooked through, about 8–10 minutes total. Remove meatballs from the skillet and set aside.

SAUCE

In the same skillet, reduce heat to medium and add butter. Once melted, whisk in the flour and cook until lightly golden.

Slowly whisk in the beef broth, followed by the heavy cream, until smooth. Stir in Worcestershire sauce and Dijon mustard. Bring to a gentle simmer and cook until thickened. Season with salt and pepper to taste.

Return the meatballs to the sauce and simmer for 3–5 minutes, spooning sauce over them to coat and allow the flavors to meld.
