Thai Biscoff Cheesecake

Ingredients
•	2 packs Biscoff cream-filled cookie sandwiches, crushed
•	2–3 cups whole Greek yogurt
•	½ cup Biscoff cookie butter (more or less to taste)
•	1 cup Biscoff cookie butter/cream, melted (10–20 sec microwave)
•	4 cookie sandwich tops (for garnish)

Assembly
Crush cookies into fine crumbs; press firmly into the bottom of a 4–5 inch glass container

Mix Greek yogurt + cookie butter until smooth

Spread mixture evenly over crust (about 2 inches thick)

Pour melted cookie butter on top

Add cookie tops + extra crumbs

Refrigerate 30–60 minutes, then enjoy
