Creamy Garlic Steak Bites Penne with Roasted Broccoli

Ingredients

Steak Bites
    •    4 ribeye steaks (about 2–2½ lb total), cubed
    •    Salt & pepper (to taste)
    •    Fork-puncture steaks on both sides so seasoning penetrates
    •    2–3 tbsp butter (for searing)

Pasta
    •    4 boxes eatbanza Brown Rice Banza Penne pasta

Sauce
    •    1 yellow onion, diced
    •    10 garlic cloves, minced
    •    2 cups heavy whipping cream
    •    1 cup freshly grated Parmesan
    •    Salt & pepper
    •    Red chili flakes (to taste)

Roasted Broccoli
    •    4 lb broccoli crowns, cut into florets
    •    Olive oil
    •    Salt & pepper

Instructions
    1.    Prep & Sear Steak: Season cubed ribeye generously with salt & pepper. Heat a very hot pan with a little butter. Sear steak cubes in batches until golden brown and juicy (about 2–3 min per side). Remove to a plate.  
    2.    Roast Broccoli: Preheat oven to 425°F. Toss broccoli florets with olive oil, salt & pepper and roast 10–15 minutes until tender and slightly charred. (425°F is standard for quick roasting w/ a crisp exterior.)  
    3.    Cook Pasta: Follow the package instructions. Reserve 1 -2 cups pasta water for sauce. Drain and set aside.
    4.    Make Sauce: In the same skillet used for steak, add onion and minced garlic; sauté until fragrant. Pour in heavy cream; simmer 2–3 min. Add Parmesan, stir until melted and smooth. Season with salt, pepper, and chili flakes to taste.  
    5.    Assemble: Add cooked penne to the sauce and toss to coat. Plate pasta, top with steak bites, then roasted broccoli. Add extra Parmesan & chili flakes if desired.
