## Caption

Beef Kofta w/Potatoes, Onion & Homemade Pita

Meat Kofta
   •   3 lb ground beef
   •   1 onions, 6 cloves garlic, & ½ bunches parsley- all minced
 •   2 eggs
   •   1 tbsp paprika, cumin & tbsp salt
   •   1/2 tbsp black pepper

Sheet-Pan Vegetables
   •   8 potatoes & 1 large onions, sliced thin
   •   4 Anaheim peppers, sliced lengthwise
   •   2 cups cherry tomatoes

Potato Seasoning
   •   1 tbsp paprika, garlic powder, salt, dried oregano, Black pepper to taste

Sheet-Pan Sauce
   •  1/3 cup tomato passata
   •   1/4 cup olive oil
   •   1 cups hot water
   •   Salt to taste

Tzatziki Sauce
   •   2 cups Greek yogurt
   •   2 cucumbers, grated and squeezed
   •   4 cloves garlic, finely grated
   •   Small bunch dill
   •   salt to taste
   •   Juice of ½ lemon

Greek salad :
• Micro-chopped Tomato, dill pickles, red onions,  minced parsley, crunchy
pickled tomatoes from kaylinandkaylin , red wine vinegar, black pepper, olive oil, salt)

Directions:
Combine all kebab ingredients in a bowl and knead until smooth.

Portion the meat into ¼-lb oval “football” shapes and place one on the outside center of a Ziploc bag. Lay a wooden skewer on top and press it halfway into the meat, then fold the bag up and over so the plastic encloses the meat and the bag edges meet. Use a bench scraper to roll and mold the meat into a uniform cylinder around the skewer.

Arrange sliced onions in the center. Toss potatoes with potato seasoning and line them around the outer perimeter of the pan. Place kebab skewers on top of the onions. Tuck Anaheim pepper halves between the skewers and arrange cherry tomatoes along the inner perimeter.

Whisk together tomato paste, olive oil, hot water, and salt. Pour evenly over the entire pan.

Bake at 350°F (180°C) for about 30 minutes, until the kebabs reach an internal temperature of 160°F and the potatoes are tender. Broil for 2 minutes to brown the kebabs.

While baking, mix all tzatziki ingredients until smooth and chill.
