Whole Chicken Parmesan
Ingredients
•	1 whole chicken (3½–4 lb), fully deboned and butterflied
•	Salt & pepper
•	1½ cups flour
•	4–5 eggs, beaten
•	2 cups panko + 1½ cups grated Parmesan (mixed)
•	1½–2 cups olive oil + 1 stick butter (for frying)
•	Olive oil spray or butter (for sheet pan)
•	~1½ jars marinara sauce
•	20–24 oz fresh mozzarella, grated
•	Extra grated Parmesan for topping

Instructions

1) Prep the Chicken
1.	Lay the deboned, butterflied chicken flat on a cutting board.
2.	Gently pound to even thickness (about ½″), especially the breasts.
3.	Season both sides generously with salt and pepper.

2) Bread the Chicken
1.	Dredge the entire chicken in flour, shaking off excess.
2.	Dip thoroughly into beaten eggs.
3.	Press into the panko + Parmesan mixture, coating well.

3) Fry to Golden
1.	Heat olive oil + butter in a large skillet over medium heat.
2.	Fry the chicken in sections (depending on pan size) for 3–4 min per side, just until golden — it doesn’t need to be fully cooked through yet.
3.	Transfer to a wire rack and sprinkle lightly with flaky salt.

4) Gooey, Cheesy Slide
1.	Preheat oven broiler.
2.	Butter or spray a quarter sheet pan so nothing sticks.
3.	Spread a layer of marinara sauce in the bottom of the sheet pan (enough to cover, but not puddle).
4.	Top the sauce with a thick layer of grated fresh mozzarella and some extra Parmesan.
5.	Broil on high until the cheese is totally gooey, melted, and bubbling — watch closely! 

5) Assemble & Serve
1.	Place the fried chicken on a large serving platter.
2.	Carefully tilt and pour the hot marinara-mozzarella pan over the chicken, letting the cheesy sauce slide over it (this is the “slide” method). 
3.	Finish with extra Parmesan, cracked pepper, and fresh basil if you like.
