Your wife just got home from dropping off our daughter abroad and she was really sad so I made a dish for her. That’s her all-time favorite.  Potato Pave also known as 1000 layer potato…. It’s actually quite easy to make it just takes one day but sitting in the night.

1,000 Layer Potato Pavé 

Ingredients:
* 1 cup heavy cream
* Salt & black pepper
* 3 lbs russet potatoes (preferably 1 lb each)
* 5 tbsp unsalted butter (1 tbsp softened, 4 tbsp cubed)
* Canola oil
* 2 thyme sprigs
* 2 garlic cloves, skin-on, crushed
* Fresh chives, minced
Instructions:
1. Prep Oven & Cream: Preheat oven to 350°F. Season cream with 1 tsp salt, ½ tsp pepper.
2. Slice Potatoes: Peel and trim potatoes. Using a mandoline, thinly slice into cream to prevent browning.
3. Prep Pan: Butter a 9x5-inch loaf pan with softened butter. Line with parchment (leave overhang), butter paper, and season with salt & pepper.
4. Layer: Arrange potato slices in layers, trimming to fit. After every two layers, dot with butter cubes and season.
5. Bake: Fold parchment over potatoes, cover with foil. Bake for ~1 hour 50 minutes, until very tender. Cool 15 minutes.
6. Press & Chill: Press with foil-wrapped cardboard and weights (e.g., cans). Cool to room temp, then refrigerate 6+ hours or up to 2 days.
7. Unmold & Cut: Lift out or invert onto cutting board. Trim edges, cut into 12 portions. Let sit at room temp for 30 minutes.
8. Brown: Sear in hot canola oil with garlic and thyme until golden on both sides.
9. Serve: Top with a bit of butter and sprinkle with chives.
Storage: Refrigerate up to 3 days. Reheat in skillet or 350°F oven.
