GREATEST LASAGNA EVER

The best gift I got this holiday was my college kids coming home and saying how much they missed my cooking and asking me to make this!💗

** I saved time using jarred pasta sauce, my homemade tomato sauce recipe is at the bottom

Lasagna Ingredients:
•	32 oz mozzarella (16 oz shredded, 16 oz sliced)
•	1 cup grated parmesan
•	2 quarts tomato basil sauce carbonefinefood 
•	2 boxes lasagna noodles (cook al dente)

Meat Sauce:
•	2 tbsp olive oil
•	1 large onion, finely diced
•	2 garlic cloves, minced
•	½ cup red wine
•	2 lbs ground beef
•	2 pinches salt
•	2 quarts tomato basil sauce (jarred or homemade)

Spinach Ricotta Filling:
•	2 tbsp olive oil
•	½ large onion, finely diced
•	2 garlic cloves, minced
•	2 bunches spinach, chopped
•	2 cups whole milk ricotta
•	2 eggs
•	½ cup grated parmesan
•	Salt to taste

How to Make It:
1️⃣ Sauté onions & garlic in oil, add beef + salt, brown well. Stir in tomato sauce, simmer, and salt to taste.
2️⃣ In a separate pan, sauté onions, garlic & spinach until wilted. Off heat, mix with ricotta, then eggs & parmesan. Season to taste.
3️⃣ Cook noodles until slightly al dente.
4️⃣ Butter a 9x13” dish. Line bottom with noodles, letting ends hang over edges.
5️⃣ Layer: thin meat sauce → noodles → 1/3 meat sauce + 1/4 mozzarella → noodles → 1/3 spinach mix. Repeat (3 full layers).
6️⃣ Fold over noodles, top with sauce, sliced mozzarella & remaining parmesan.
7️⃣ Cover with foil & bake at 350°F for 20 min. Uncover & bake 15 min more until browned. Let it rest, slice & serve!

Homemade Tomato Basil Sauce (Optional):
•	6 cans (28 oz) whole peeled tomatoes
•	20 garlic cloves, crushed
	l•	1 cup olive oil
•	Salt
•	4 oz fresh basil

Simmer all but basil for 25 min. Blend until smooth. Stir in basil, rest 10 min, salt to taste. Freeze the extra!
