Episode 1 of Thanksgiving Content! 
Nancy was born on Thanksgiving and Thanksgiving lands on her birthday again this year so we take this very seriously! Come back tomorrow for our “TO-DIE-FOR- Suffing Recipe!! 

Ingredients:
• 1 (20 lb) turkey
• ¼ c each rosemary, thyme, sage (minced)
• ¼ c garlic, minced
• ½ c parsley, minced
• ½ c olive oil
• Salt + pepper
• 2 sticks butter (slice length-wise into 3 slabs = 6 total)
• Fresh tarragon leaves

Instructions:
1️⃣ Preheat oven to 425 °F.
2️⃣ Spatchcock: Use kitchen shears to cut out the spine. Flip turkey breast-side up and press down to crack the breastbone + flatten.
3️⃣ Press fresh tarragon onto each butter slab. Gently separate skin over breast and slide the tarragon-butter slabs under the skin.
4️⃣ Mix herbs, garlic, parsley, olive oil, salt & pepper into a paste. Rub all over the bird—under skin + over skin.
5️⃣ Roast on a sheet pan or cast-iron skillet (add potatoes underneath if desired) for ≈ 2¾-3¼ hrs, until the thickest part of the breast (and thigh) reaches 165 °F. Tent with foil if browning too fast.
6️⃣ Rest 15-20 min before carving.

Quick Gravy:
Set roasting pan on stove → whisk 2 tbsp flour into drippings → cook 1 min → add 2 tbsp butter + splash white wine → whisk in 1–2 c broth till smooth + thickened. Season + serve.
