## Caption

Nancy’s Famous Chicken Meatballs + Parmesan Orzo

Meatballs:
* 2 oz Italian bread, diced
* ½ cup warm water
* 2 tbsp butter
* 1 shallot, minced
* 4 garlic cloves, minced
* 1 tsp garlic powder
* 1½ Ibs ground chicken thigh
* ¼ cup grated parmesan
* 2 tbsp chopped fresh sage
* 2 tbsp chopped fresh parsley
* ½ tsp kosher salt
* olive oil @garciadelacruzoliveyou 
Orzo:
* 3-4 tbsp butter
* 8 sage leaves
* 1-2 shallot, thinly sliced
* 1 cup orzo @3farmdaughters 
* 1 cup dry white wine
* 1 handful thyme sprigs, tied
* 1½ cups chicken stock 
* ⅓ cup heavy cream
* 2 oz spinach (about 2 cups)
* ¼ cup grated parmesan

Instructions:

* Soak bread in warm water 5 min.
* after 5 minutes, mix the soaked bread, with ground chicken, parmesan, sage, parsley & salt. Form 15 meatballs, drizzle with a little bit of olive oil, then bake at 450°F on oiled parchment 25-30 min.
* Add 1 tbsp butter to a pan, as it starts to Brown, add w/ sage leaves, cook for a few minutes, or until the leaves start to brown then remove leaves. 
* Add 2-3 more tbsp butter to the pan, then shallot, garlic, granulated garlic & red pepper. Sauté 2 min, add orzo, wine & thyme, simmer 2 min. Add stock, simmer 6 min. Stir in cream, spinach & parm, cook ‘til creamy. Remove thyme.
* Serve orzo topped w/ meatballs
crispy sage, more parm, pepper & herbs.
