Calories per 100g of broth: 
20 calories (2.7c 0.8f 0.3p)*
It would pretty much be 0 fat if we skimmed out all the fat! 

Then you can just weight out all the ingredients individually when you construct your pho based on whatever calories and macros you want. 

Broth:
1 large ginger, sliced
1 onion, peeled & sliced in half
1 bag of pho spices (you can find pre-made ones at Vietnamese grocers)
1kg beef bones
1kg lean roast beef
60g rock sugar
10g salt
3.5L water

Season after straining the broth:
30g Vietnamese fish sauce
30g chicken bouillon
(Optional) Water if it's still too salty

Recommended Toppings: 
Banh pho noodles
Thinly sliced beef rump 
Beef balls 
Bean sprouts 
Thinly sliced onions 
Basil 
Coriander 
Lime
Hoisin Sauce
Sriracha 

1. In a large pot of boiling water, blanch the beef bones and roast for 5 minutes. Drain, then rinse the bones and beef roast, and remove as much scum as you can. 

2. Place all of your broth ingredients into a pressure cooker. Pressure cook for 45 minutes. 

3. Once ur broth is done cooking, remove everything and only save the roast beef and bones (if there's meat on it). Then strain the broth. You can also skim all the fat off after as well here if you'd like. 

5. Bring the broth to a boil and add the seasoning ingredients. 

6. Construct your pho with your preferred ingredients, then top it off with the boiling hot broth!
