Opening April 18th. Eagle just got a taste of Europe.

sirensongwinemakersloft is a new loft and bistro in downtown Eagle, built by a husband and wife team who have lived and worked in France, Spain, and Italy.

This is centered around European bistro life. Food and wine paired intentionally. Shared plates at the table. A place you settle into, not rush through.

Kevin Brown is the winemaker behind sirensongwines, producing wines from their vineyards in Washington, alongside Idaho wines from the Snake River Valley. Holly Brown leads the culinary side, with a seasonal, chef-crafted menu designed specifically to pair with the wines.

I had the opportunity to try several of the share plates. Wagyu beef carpaccio, apricot baked brie, smoked salmon crostini, warm olive mélange, Spanish-style crispy calamari, and chocolate cherry cordials. Built for pairing, not just ordering.

I cannot believe how stunning this location is. Three stories up with a rooftop overlooking downtown Eagle. I am already planning to host something here. It is sexy, sophisticated, comfortable. It feels like exactly what Eagle needed. And the wine is unbelievable.

They are a family-run business, with their kids involved, and a focus on hospitality. Their goal is to create a place people return to often and feel connected to.

They also offer a wine club designed around both food and wine.

Every Siren Song wine has a story of adventure behind it. Each one is named for a place, a moment, or an experience that shaped why Kevin chose to make it in the first place. They’re storytellers at heart here, and that shows up in the wines as much as it does in the space.
