Makes 4 servings⁣
Dumplings⁣
1 lb peeled, deveined shrimp, minced⁣
4 cloves garlic, minced⁣
1/2 cup chives, minced ⁣
1 tb toasted sesame oil⁣
2 tb tamari (or coconut aminos or low sodium soy sauce if not gluten-free)⁣
1 tb arrowroot (or cornstarch)⁣
1/2 tsp white pepper (or ground black pepper)⁣
10-15 sheets of rice paper, cut into 4 pieces each⁣
⁣
Dipping sauce⁣
1/3 cup tamari or low sodium soy sauce⁣
3 tb rice wine vinegar⁣
1 tb sesame oil⁣
2 cloves garlic, mashed⁣
2 tsp grated/minced ginger ⁣
1 tb sriracha sauce⁣
2  sesame seeds⁣
1 green onion, sliced (optional)⁣
⁣
In a bowl, mix together the shrimp, garlic, chives, sesame oil, tamari, arrowroot and pepper, until fully incorporated. Next, cut each piece of rice paper into 4 pieces, fill a large bowl with warm water, and keep that near the stove. Lightly spray a non stick skillet with avocado oil or cooking spray of choice, over medium heat. Once the pan is hot, take a cookie scoop and form round balls of the shrimp mixture and drop them into the pan. Let them cook undisturbed for 2 minutes, and while that is happening dip 2-3 rice paper pieces into the warm water for 10 seconds (should still be firm-ish), then place 1-2 pieces on top of each shrimp ball, gently pinching the edges around each ball. Repeat until all the shrimp balls are covered with 1-2 pieces of the rice paper. Now pour in 1/3 cup water around the edges and cover the pan until the water evaporates. Lift the cover, add once the shrimp has a nice crust on the bottom and is cooked through, you are ready to plate. Serve with dipping sauce and enjoy!⁣
