My friend Vicki defrancescos_kitchen has been making a quick doctored up ramen soup and a mini wonton soup with miso broth from TJs for a long time. It always inspired me to make something very similar. Lindsay from pinchofyum makes a saucy wonton soup that falls into the same category and I literally haven’t stopped making it since I first saw her makes hers over a year ago. This is Lindsay’s soup, with a few minor tweaks and it is perfectly fabulous and the reason why I always keep a couple of bags of frozen wontons in my freezer at all times. You should get into the same habit 👍 . . Quick Wonton Soup . . 3 tbls sesame oil, divided 24 shiitake mushrooms, stem removed and sliced 2 cloves garlic, chopped 1 shallot, chopped 2” peeled ginger, chopped 4 scallions, sliced One (16oz) bag frozen wontons (I like the veggie version) 3 cups veggie or chicken broth (whichever you prefer) 1/2 cup teriyaki sauce Juice of one lime 1 tbls chili crisp (if you want more heat, increase the amount) 1 (5oz) bag of baby spinach Heat 1 tablespoon sesame oil in a large skillet over medium heat. Add mushrooms and shallots and sauté for about 3-4 minutes. Add the ginger and garlic and saute for 2 more minutes. Add the frozen wontons, chicken broth, teriyaki sauce and 1/2 the scallions. Simmer for 5 minutes, with a lid on, until the wontons are heated through. Add the spinach, cover and let the heat of the soup wilt it, about another 2 minutes.
