I used castellousa Creamy Havarti Cheese in this recipe and it is having a viral moment for a reason! It’s buttery, super melty, and gives you that viral cheese pull. Swap it in for mozzarella or American to effortlessly level up any dish.

This pesto packs in tons of greens, but store-bought works just as well!

Serves: 6
Total Time: 30 minutes

Ingredients:
1 lb dried pasta, like rigatoni 
2 tablespoons olive oil 
12 oz cherry tomatoes 
3/4 cup heavy cream 
1 cup greens pesto (see recipe below) or store bought pesto 
8 oz Castello Creamy Havarti Cheese, grated 
Kosher salt and black pepper to taste 

Super Greens Pesto (yields about 2 cups):
4 cups leafy greens (arugula, spinach, kale), loosely packed
2 cups basil leaves, loosely packed
1/3 cup pine nuts 
1 cup grated parmesan cheese
1 clove garlic
Juice from 1 lemon
1/2 cup extra virgin olive oil, plus more as needed to thin out 
1 teaspoon kosher salt 

Instructions:
First, make the pesto if you’re not using store-bought. Add all ingredients to a food processor and blend on low until smooth. Add more olive oil as needed to reach your desired consistency. 
Cook your pasta according to package instructions. Drain but do not rinse. While the pasta boils, make the sauce.
Heat the olive oil in a large, deep skillet or pot over medium low heat. Add the cherry tomatoes and cook, stirring occasionally, until the tomatoes are soft and broken down, about 10 minutes. Add the cream, pesto, havarti cheese and a generous pinch of salt and stir constantly until combined and the cheese has melted. Add the cooked pasta to the sauce and season to taste before serving.
