PROJECT HIGHLIGHT

DePauw’s South Asian Student Society went to Area 30 on Monday morning to teach a cooking class! They taught a group of students how to make chicken tikka masala from scratch. It was a great team building exercise and a way to broaden their food horizons! Thank you to the Student Mini-Grant for making this possible! 

Our recipe that was used so you can make it at home! 
For one serving-

2-3 Lbs of chicken thighs (boneless)

For the Chicken marinade-

1/4 cup greek yogurt 
3-5 cloves of garlic, mashed 
1 inch nub of fresh ginger (diced finely)
2 tbsp oil 
1 tbsp red chili powder
1 tbsp garam masala
2 tbsp turmeric (if not in the masala)
1 tsp cumin
1 tsp cardamon 
salt to taste 

For the sauce- 

2 tbsp ghee
1 large onion (red) 
3-5 cloves of garlic, mashed 
1 inch nub fresh ginger (diced finely)
1 tbsp mustard oil 
1 tbsp red chili powder
1 tbsp garam masala
2 tbsp turmeric (if not in the masala)
1 tsp cumin
1 tsp cardamon 
3 large tomatoes (diced)
1 tsp sugar 
salt to taste 
1/2 cup heavy cream 

Dice the chicken, toss with marinade and put on a baking sheet. Put into the oven at 400° until cooked. 

While that is cooking, dice tomato, onion, garlic, and ginger. Put onion garlic and ginger into a pot on high and stir until sizzling. Put in ghee and tomatoes and mix until combined. Use an immersion blender or mix until smooth. Bring to a bubble with all spices, then add cream. Keep on heat until thickened. Add chicken to sauce. 

Serve over rice or with naan!
