CHICKEN MEATBALLS
1 Pound Ground Chicken
1 Teaspoon Lemongrass finely chopped
1 Large Egg
½ Cup Breadcrumbs
2 Cloves Garlic grated
1 Tablespoon Fresh Ginger grated
1 Tablespoon Fish Sauce
1 Tablespoon Red Curry Paste
1 Handful Fresh Cilantro finely chopped
Salt & Freshly Ground Black Pepper
CURRY COCONUT SAUCE
1 Tablespoon Olive Oil
½ White Onion diced
400 ml Coconut Milk (1 x 400 ml can)
½ Can Coconut Cream
½ Cup Chicken Stock
½ Cup Red Curry Paste
1 Tablespoon Fresh Ginger grated
1 Tablespoon Fish Sauce
3 Tablespoons Brown Sugar
1 Bunch Green Onions whites and greens sliced
1 Red Bell Pepper thinly sliced
2 Cloves Garlic grated
1 Lime (zest and juice)
Fresh Cilantro chopped
