Master Z's HoF BEEF Wagyu Prime Rib Recipe:

Sous Vide Prime Rib with Garlic-Herb Crust

INGREDIENTS
HoF BEEF Wagyu Prime Rib Roast (bone-in or boneless, bones tied)
Penzey's English Prime Rib Rub (or equivalent)
Extra-virgin olive oil
Fresh garlic cloves (pressed + thin slivers)
Kosher salt and freshly cracked black pepper
Fresh rosemary, finely chopped
Fresh thyme, finely chopped
Ghee (clarified butter)
PREP (NIGHT BEFORE
Pat roast dry. Coat generously with prime rib rub. Place uncovered on a rack in the refrigerator overnight to dry-brine and set the crust.

COOKING DAY
1. Garlic-Herb Wet Rub: Mix olive oil, pressed garlic, salt, pepper, rosemary, and thyme into a loose paste. Rub generously over the entire roast, including under the tied bones.
2. Garlic Insertion: Cut shallow slits across top and sides; insert garlic slivers evenly.
3. Initial Sear: Roast at 450°F for 15-20 minutes until a crust forms. Remove and cool slightly.
4. Sous Vide: Seal roast with any juices and cook at 131°F for 6 hours.
5. Dry & Ghee Brush: Remove, pat dry, brush exterior with melted ghee.
6. Final Crust: Roast at 500°F for 10-15 minutes until deeply browned.

SERVE
Rest briefly, slice thick, and enjoy edge-to-edge medium-rare HoF Wagyu prime rib with a bold, steakhouse crust.
