BROWN BUTTER CHOCOLATE CHUNK COOKIES :

Homemade Butter :
● 	3 heavy whipping cream (35%) – about 2- 2½ cups of butter

Cookies :
● 	¾ cup homemade butter (unsalted)
● 	1 cup brown sugar
● 	1/4 cup white sugar
● 	2 eggs
● 	1/2 tbsp milk
● 	1½  tsp vanilla extract
● 	1 cup all-purpose flour
● 	1/2 tsp each of baking soda & baking powder 
● 	1/4 tsp salt
● 	1½ cups chopped chocolate (50% or above cocoa)
● 	Optional: flaky sea salt for sprinkle

 Vanilla Buttercream :
● 	½ cup unsalted butter, softened
● 	½ cup powdered sugar
● 	1 tsp vanilla extract
● 	1 tbsp milk or cream

Whip heavy cream in your mixer until it separates into butter and buttermilk, rinse with cold water, remove excess liquid, shape the butter, and store the buttermilk for later. Brown the butter in a saucepan over medium-low heat, stirring continuously, and let it cool slightly. Mix the browned butter with sugars, eggs, milk, and vanilla until combined, then add flour, baking soda, baking powder, and salt, mixing just until incorporated. Fold in chopped chocolate chunks, scoop the dough onto a baking sheet, and chill briefly, preferably for an hour. Bake at 350°F (175°C) for 10–12 minutes until edges are golden and centers remain soft, then cool completely. Whip vanilla or coffee buttercream by beating softened butter  with powdered sugar, vanilla, and milk until smooth and fluffy, about 3–5 minutes. Pipe the buttercream onto one cookie, sandwich with another, and finish with a sprinkle of flaky sea salt if desired.
