Cinnamon peach upside-down puff pies — instead of the filling going in the pie, it goes under it. 😍🥧 A layer of honey, cinnamon, and juicy peach slices hit the pan first, then we crown it with buttery puff pastry and bake until golden.

⭐️Flip it, top it with ice cream, and watch that magic drip happen. She’s flaky, sticky, and a little dramatic — just how we like it.

All you need to make 6 individual pieces:
- 2/3 cup honey
- Pinch of cinnamon
- 2-3 ripe peaches, sliced thinly by a mandoline
- 1 pack puff pastry, thawed and sliced into 6 squares
- 1 egg wash (1 whisked egg)
- 1/3 cup crushed walnuts
- Vanilla ice cream, to serve with
Method:
- Preheat oven to 380F.
- Line a baking sheet with parchment paper, and drizzle with 1 tbsp honey, a pinch of cinnamon, slices of peaches, and another drizzle of honey.
- Place 1 piece of the dough on top, and seal edges with a fork.
- Create a few slits on the dough using a knife, then brush egg wash on top, and sprinkle with some of the crushed walnuts.
- Repeat the process for the remaining 5 mini pies with the remaining ingredients.
- Place the baking sheet in the oven, and bake for 12-15 minutes, or until golden. Take it out, and turn it upside down. Scoop ice cream on top, and enjoy.
