Roasted Chicken Thighs & Cucumber-Avocado Salsa

For the chicken thigh:
4 chicken thighs, skin on
1 red onion, thinly sliced Juice of 1 large lemon 2 tsp tomato paste
2 tsp olive oil
Salt and pepper, to taste 1 tsp sweet paprika
1 tsp garlic powder
1/2 tsp dried oregano
1 tbsp sumac (for sauce paste)

For the Cucumber Avocado Salad:
2 Persian cucumbers, finely diced
1 small avocado, cubed
1/4 small red onion finely diced
2 tosp fresh cilantro, chopped
1/2 tsp dried oregano

1 tosp olive oil
Salt and pepper, to taste
Optional: Lemon juice (to taste)

For the Green Goddess Dip:
1 large handful cilantro
1 large handful parsley
1 large handful basil
1 large handful chives
1 small handful mint
1 small handful dill
1 small shallot
2 garlic cloves
1/2 cup Greek yogurt

For the Chicken Thighs:
Preheat the oven to 425°F (220°C).
Prepare the onions: Thinly slice 1 red onion and place the slices at the base of an oven-safe dish. Place chicken in a large bowl.

Make the sauce paste: 
Adding to the bowl of chicken, combine the juice of 1 large lemon, 2 tsp tomato paste, 2 tsp olive oil, salt, pepper, 1 tosp sweet paprika, 1 tsp garlic powder, 1/2 tosp dried oregano, and 1 tosp sumac. Mix thoroughly with chicken.  Place the chicken thighs on top of the sliced onions in the dish.  Roast the chicken: Roast for an initial 35 minutes at
425°F. (Roast for an additional 5–10 minutes for extra crispiness or if not ready.  All ovens vary)

 Cucumber Avocado Salad:

Finely dice 2 Persian cucumbers, cube 1 small avocado, and finely dice 1/4 of a small red onion (about 3 tbsp).
Mix the salad: In a bowl, combine the diced cucumber, avocado, red onion, and 2 tosp of fresh cilantro. Add 1/2 tsp of dried oregano, 1 top olive oil, and season with salt and pepper.. Toss everything together.

The Green Goddess Dip
Blend the cilantro, parsley, basil, chives, mint, dill, shallot, garlic cloves, creme fraiche, zest & juice of 1 lemon, 2 tablespoons olive oil, and a generous pinch of salt and pepper.
