Philly’s Pickle & Dill Smashed Potatoes

2 lbs mini baby potatoes, scrubbed
3 scallions, diced
Olive oil + salt

Place whole mini potatoes on a sheet pan. Drizzle generously with olive oil + salt and toss to coat. Roast at 425°F for 30 mins until fork tender.

Remove from oven and smash each potato with the bottom of a glass. Drizzle with more olive oil so all the edges get crispy. Return to oven for about 20 mins, flip, and continue roasting until deeply golden and crispy on both sides. 

Dressing:
¾ cup Greek yogurt
½ cup kewpie mayo
2 tsp Dijon
Juice ½ lemon
2 tsp red wine vinegar
1 garlic clove, minced

Whisk everything to combine. 

Toss warm crispy potatoes with dressing, ¼ cup fresh dill, 2 tbsp chives, 6 minced pickles, 1 finely chopped shallot, salt + pepper.

Chicken thighs: toss in any BBQ sauce. Marinate for 30 min. Bake on sheet pan at 350°. 30 min. (Until cooked through) Baste w/extra sauce at 10 minutes. Broil - 1 min to caramelize sauce.

Crispy Cheesy Potato Halves with Ground Beef

Serves: 4 (8 halves)
Prep: 15 min | Cook: ~40 min

Ingredients

* 2 lbs ground beef
* 4 russet potatoes, halved lengthwise
* Oil (for cooking + roasting)
* Salt, black pepper, garlic powder
* 1–1½ cups shredded cheese (cheddar, mozzarella, parmesan mix)
* Chives (optional)

Instructions

1. Cook the beef
  Heat oil in a pan over medium-high. Add ground beef, season with salt, pepper, and garlic powder. Cook until browned and slightly crispy on the bottom. Set aside.
2. Bake the potatoes
  Preheat oven to 425°F (220°C).
 Coat potatoes in oil and salt. Place cut-side down on a sheet pan and oil the skins.
 Bake 30–40 minutes until tender with a golden crust 
3. Add cheese crust
  About 5 minutes before done, remove from oven.
 Flip potatoes, add a layer of cheese directly onto the pan, then set potatoes back on top (cut side down onto cheese).
 Return to oven until cheese melts and crisps.
4. Assemble
Remove, flip each potato half over, and lightly press/split open the potatoes.  Top each half with ~½ cup ground beef.  Finish with chives.
