GRAHAM CRACKER & PUMPKIN ICE CREAM SANDWICH ~ I needed a little break over the last week to reset and recharge, but during that time this little tasty treat came together. I had graham crackers and canned pumpkin that needed to be used, but I wanted something a little less traditional (wanted to avoid pumpkin pie or pumpkin cheesecake - great options, but wasn’t feeling it). Maybe I’m just in denial about how quickly this year is flying by and not ready to put my ice cream maker away for the winter... 😉
