## Caption

This will be the BEST CREAMY BACON POTATO SALAD you make all summer ✨ The perfect side dish for barbecues, cookouts, and potlucks. It’s loaded with crispy bacon, eggs, dill pickles, fresh dill, and the creamiest dressing ever.

Ingredients:
• 5 lbs Yukon gold potatoes
• 1 tbsp sea salt
• 8 large eggs
• 12 slices bacon, cooked crispy and chopped (reserve some for garnish)
• 1 cup celery, diced
• 3/4 cup kosher dill pickles, finely diced
• 1/2 medium red onion, finely diced
• 5 stalks green onion, chopped (green parts only, reserve some for garnish)
• 1/4 cup fresh dill, chopped (reserve some for garnish)

Dressing:
• 2 cups Best Foods mayonnaise
• 2 tbsp yellow mustard
• 1/3 cup pickle juice
• 1¼ tsp smoked paprika, plus more for garnish
• 1 tsp sea salt, more to taste
• 1/2 tsp black pepper

Directions:

1. Wash and scrub the potatoes well. Add them to a large pot and cover with water by about 1 inch. Bring to a medium boil, add 1 tbsp sea salt, and cook until fork tender, about 15–20 minutes depending on size. Drain and let cool completely.
2. Once cooled, peel the skins off using your fingers or a small knife if needed. Chop potatoes into bite-sized pieces and add to a large mixing bowl.
3. Meanwhile, boil the eggs for 10 minutes. Drain and transfer to cold water or an ice bath until cooled. Peel the eggs, separate the yolks from the whites, then roughly chop the egg whites and set aside.
4. In a bowl, mash the egg yolks with a fork. Add mayonnaise, mustard, pickle juice, smoked paprika, sea salt, and black pepper. Mix until smooth and creamy. Taste and adjust seasoning if needed.
5. To the bowl with potatoes, add egg whites, crispy bacon, celery, dill pickles, red onion, green onion, dill, and dressing. Gently mix until fully combined.
6. Transfer the potato salad to a serving bowl. Sprinkle lightly with smoked paprika, then garnish with the reserved bacon, dill, and green onions. Chill for at least 30 minutes before serving and enjoy!
