Moms homemade burgers
2.5 lbs of ground chicken breast and thigh
Seasonings:
1. Salt to taste
2. 1 tsp of fresh ground pepper
3. 1 tsp of garlic powder
4. 1 tsp of Italian spices
5. 1 tsp of paprika
6. 1 tsp of white pepper
2 tbsp of soy sauce
1 tbsp of bbq sauce
2 tbsp of cornstarch/corn flour
Mix everything well qnd set aside to marinate. At least an hour. Make patties and put a dent in the middle to avoid shrinking. Fry 3-4 mins per side. Or till the burger patty is done. Add cheese slices, place a lid on your griddle/pan and let it melt.

Sauce:
1/2 cup of mayo
1.5 tsp of more mustard
1.5 tbsp of ketchup
1 tbsp of Hot sauce
Dash of honey
1/5 tsp of garlic powder
1 tsp of black pepper
Salt to taste
2 tsp of vinegar
1 tsp of Worcestershire sauce
1 tbsp of bbq sauce
Mix all the ingredients together and set aside.

Caramelized onions
Slice an onion. Add a pinch of salt, 1 tbsp of butter and 1 tbsp of olive oil. Cook for 30 mins on very low heat till the onions turn a light golden brown. Do not rush the process. Add these onions to the sauce.
Assembly
Toast your burger buns, spread the sauce, place the patty and toppings of choice. I recommend lettuce, cucumbers, tomatoes and jalapeños.

You can freeze the burger patties. Sauce stays well for 7 days in the fridge!!
