## Caption

Makes 4

3 hard boiled eggs
3 stalks of green onion 
Salt to taste
1/2 tsp or more of crushed black pepper
1/2 tsp of mustard powder (you can use a liquid mustard also)
1 tbsp of mayo or more
1.5 tbsp of butter
Bread (I used white)

1. Mash the eggs. 
2. Cut the greens and whites of the onion leaving the middle. 
3. Now take the middle of the green onion and chop it really really fine. 
4. Add it to the eggs and the rest of the ingredients.
5. Batter should be slightly loose and not dry
6. If you want you can spread some butter on the bread before add the egg mixture. If your bread is fresh you won’t need to 
7. Spread the mixture, place the tops, cut the corners if you want
8. Cut into TRIANGLES (or squares 😑 you rebel)
9. Cucumber slices are optional
10. Cover with a DAMP paper towel, a clean cloth 
11. You can make these hours in advance. Just check the paper towel after a few hours incase it’s gone dry. Re wet and place over.
