Let’s meal prep my kind of bread… 55g protein & packed with flavor! As a busy mom prepping ahead for the week always comes in so handy!! 
With this prepped, I’m set for next week ✅
This lentil tofu bread has over 55g of protein and keeps perfectly in the fridge for a quick breakfast or snack! You can swap out the tofu for paneer if you’d like. 

🥖 Tofu Lentil Protein Bread
Makes 1 loaf
Ingredients:
-100 masoor dal (split red lentils), soak in water for 2–3 hours
-100g firm tofu (I used Trader Joe’s extra firm tofu)
-Lime juice + salt + red chilli flakes to season tofu 
-3 tbsp Fage Greek yogurt (0% or 2%)
-4 tbsp besan mixed with 4 tbsp water to make it smooth and runny
-1 cup spinach, finely chopped
-2 tbsp red onion, finely chopped
-½ jalapeño, finely chopped (adjust to spice preference)
-1 tbsp olive oil
-1 tsp baking powder
-1 tsp salt
-black pepper
-1 tbsp sesame seeds (for topping)

Method:
	1.	Preheat oven to 180°C / 356°F.
	2.	Drain soaked lentils and add to a blender or food processor with besan mix and Greek yogurt.
→ Blend until smooth and creamy.
	3.	Transfer to a large bowl and mix in seasoned tofu, chopped spinach, onion, jalapeño, olive oil, baking powder, salt, and pepper.
	4.	Line or grease a loaf pan (8x4”) and pour in the batter. Smooth the top.
	5.	Sprinkle sesame seeds on top.
	6.	Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
	7.	Let it cool completely before slicing for best texture.

Here’s how to store it after prepping:
🧊 Fridge: Let the bread cool completely, then slice and store in an airtight container. Stays fresh for up to 5 days.
🔥 To reheat: Just toast or warm in the microwave for 15–20 seconds, so good with a spread or chutney on top!
