## Caption

Tagine M’Derbel:  Chicken Cooked In Warm Spices with Caramelized Tomatoes.  The star of this tagine is the caramelized topping which can be done with tomatoes, caramelized pumpkin or eggplant. 
⁣
I’m using an unglazed clay tagine cooked over coal on a mejmar or traditional grill.  But, you can easily do this in a tagine on the stovetop or in a dutch oven.  ⁣
⁣
For The Chicken:⁣
1 3lb chicken, cut into 8 pieces ⁣
1 onion, grated ⁣
2T @atlasoliveoil 
1t ginger ⁣
1/2t turmeric ⁣
1/2t black pepper⁣
1/2t cinnamon ⁣
1 clove of garlic, minced⁣
Pinch of saffron steeped in 1/2c of hot water ⁣
Salt to taste ⁣

For The Caramelized Tomatoes ⁣
4.5 lbs tomatoes, grated ⁣
1/2 cinnamon stick ⁣
Large pinch of salt ⁣
7T sugar⁣
2T Desert Miracle Olive Oil ⁣
⁣
For Garnish⁣
Sesame Seeds ⁣
⁣
Add olive oil, grated onion, garlic, spices, chicken and salt to a tagine or dutch oven set over medium heat.  Mix ingredients together to coat the chicken in spices.  Cover and let cook for 5 minutes.  Add saffron water, bring to boil, reduce to simmer and cook covered over low heat for about 45 minutes or until your chicken is cooked.⁣

Check the tagine occasionally ensuring there is enough water, add a little if necessary.⁣

While chicken cooks, add grated tomatoes, cinnamon and salt to a saucepan set over medium heat.  Bring to boil, reduce to simmer and cook until about half of the water has evaporated.  Add sugar and continue to cook over low heat until the water has evaporated and the tomatoes are thick and jammy.  Add 2T of mild olive oil, stir to combine.⁣ The process will take about 50 mins.

Serve chicken directly in the tagine topped with tomato jam and sesame seeds.  There will be leftover jam, enjoy it alongside the tagine with crusty bread.  ⁣

Tips:  If you’re using chicken breasts, they will cook more quickly and can be removed from the tagine while the other pieces of the chicken cook and added back in at the end to avoid over cooking. ⁣

Caramelized tomatoes can be made in advance and are even better the next day.
