## Caption

Moroccan Fish Tagine With Caramelized Onions & Raisins:  A Sweet & Savory Fish Recipe.  Flakey, tender fish meets sweet, jammy caramelized onions.  Here’s how to make it at home: 

For The Fish:
2lbs fish (conger, monkfish or meaty whitefish) 
3T olive oil 
1/2t ground black pepper
1/2t ground turmeric 
1/2t ground ginger
Pinch of Saffron bloomed in 4T of water, divided
Salt, to taste 

For The Onions: 
3 large onions, sliced (about 2lbs) 
4T olive oil 
1/4t black pepper
3/4t ground turmeric 
3/4t ground ginger
2 small cinnamon sticks
1T butter, smen or ghee 
1/2c raisins, soaked in hot water for 15 minutes 
1T sugar
1t ground cinnamon
Salt, to taste

Instructions:
In a large bowl, combine fish, olive oil, spices and half of the saffron water.  Toss to coat each piece of fish.  Cover and place in the refrigerator for about an hour. 

Meanwhile, prepare the onions combining sliced onions, olive oil, spices, remaining saffron water and butter or smen in a heavy bottomed pot.  Cook covered over medium low heat until the onions start to soften, about 30 minutes. Check occasionally to ensure the onions are not sticking to the bottom of the pan.  If they are - splash in a tablespoon or two of water. 

Once the onions are very soft add drained raisins, sugar and cinnamon.  Continue to cook uncovered until the onions are jammy and beautifully caramelized.

Nestle the marinated fish into the onions and cook covered until fish is flakey.  Cooking time will depend on the type of fish that is used. 

Serve with the caramelized onions spooned onto of the fish and enjoy with crusty bread.
