## Caption

MAAKOUDA:  A delicious potato fritter that’s crispy on the outside and creamy on the inside.  Maakouda is a popular street food that you’ll find across Morocco that can be eaten on their own or in a sandwich.  Here’s how to make them at home: 

Ingredients:
2lbs potatoes
2 cloves garlic, minced
1.5T fresh parsley, finely chopped
1.5T fresh cilantro, finley chopped 
2t ground cumin
1/4t turmeric
1/4t ground black pepper
2t mina harissa
Salt to taste
2 eggs
Flour, for dredging
Olive oil, for frying
 Peel potatoes and cut them into similar sized pieces.  Place potatoes in a pot of salted water and bring to a boil. Cook until the potatoes are fork tender.  Drain and allow the potatoes to cool completely. 
In a mixing bowl, mash the potatoes using a food mill, potato masher or a fork.  Once smooth add garlic, parsley, cilantro, cumin, turmeric, black pepper and harissa.  Add salt to taste.  Once seasoning is correct, mix in 1 egg.

Using your hands, shape the potato mixture into small patties, about 2-3 inches in diameter, flattening them slightly.  Dip each potato patty into a beaten egg, making sure both sides are coated. Dredge in flour, gently shaking off any excess.  If patties are too sticky you can add in a bit of flour or breadcrumbs.  You can also try oiling your hands to make them easier to handle.

Heat a generous amount of olive oil in a large skillet over medium heat. Once the oil is hot, add the patties in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes per side, or until golden brown and crispy. 
Once cooked, drain on paper towels to remove any excess oil. Serve warm, with harissa or sauce of your choice.  Or, enjoy them in a sandwich with harissa.
