Msemmen: A crispy, flakey Moroccan flatbread that’s often eaten for breakfast. 

There’s no better way to start the day than with Msemmen drizzled with honey and accompanied by mint tea.  Here’s how you can make them at home: 

Ingredients
1.75c all purpose flour
3c mazyana_brand extra fine semolina (finot)
2c lukewarm water
1t salt

For Forming The Msemmen
6T clarified butter 
Extra fine semolina (finot)
Vegetable Oil

In a large mixing bowl, combine the all-purpose flour, semolina and salt. Gradually add just enough water until the dough comes together and is slightly sticky. You might not need all of the water, so add it slowly.

Knead continuously for at least 10 minutes until it becomes smooth and elastic. If the dough is too sticky, add a bit more flour.  Form into a large ball and rub the dough generously with oil.  With oiled hands, form the dough into balls about the size of a golf ball. Place the balls on a lightly oiled tray, cover with plastic wrap and let rest for 15 minutes. 

To shape, generously oil your work surface before taking one dough ball and flattening it gently with your fingers to form a disc. Continue to use your fingers and palms to stretch the dough into a thin layer, almost transparent. 

Drizzle a thin layer of clarified butter evenly over the surface and sprinkle with extra fine semolina before folding as seen in the video.  Let rest another 10 minutes after folding.

Heat a bit of oil in a griddle or non-stick pan.  Flatten the square dough into a thinner square shape before cooking for a few minutes on each side, flipping regularly.  They’re done when brown and crispy.

Serve with honey, amlou or jam and always alongside Moroccan mint tea.  Enjoy!
