## Caption

Msakhan:  A Delicious Palestinian Dish Of Chicken Cooked In Spices & Caramelized Onions On Taboon Bread.

After consulting countless recipes, I realized there are several different methods to making this at home.  Here’s how I decided to prepare it: 

For The Chicken 
4 Skin On, Bone In Chicken Leg Quarters
4T olive oil 
1T ground sumac
1T 7 spice 
3/4t black pepper 
1/2t ground all spice
Salt, to taste 

For The Onions 
4 medium sized onions, diced 
3/4c - 1c olive oil
2 heaping tablespoons, ground sumac 
1t 7 spice 
1/2t cumin
3/4t black pepper
Salt, to taste 

For Serving 
Day Old Taboon Bread, Pita Bread or Naan 
1/3c pine nuts, toasted in olive oil 
1/4c parsley, chopped 

Preheat oven to 450 degrees. 

In a large bowl, combine chicken, olive oil and spices.  Massage the spices into the chicken and set aside for 15 minutes (this can be done a day in advance and left to marinate in the fridge). Place on a sheet pan and bake in the oven for 35-40 minutes, until the chicken legs reach an internal temperature of 170-190 degrees.  Set aside and keep warm.

Meanwhile, add onions and olive oil to a dutch oven or heavy bottom pan.  Season with salt and let cook for 5 minutes over medium heat.  Reduce heat to low, cover and cook for 25 minutes, stirring occasionally to ensure onions are not sticking to the bottom of the pan - adding a splash of water if necessary.  Once very tender, remove lid and add spices continuing to cook uncovered until the onions are caramelized and jammy, about 15 more minutes.  Adjust seasoning.

To assemble, brush bread with olive oil before placing under the broiler for about a minute to reheat.  Top with onions, chicken, pine nuts and parsley.
