H’rbil or Herbel: A delicious porridge of cooked wheat and will often enjoyed as breakfast during Eid in Morocco. It’s so simple to make at home - here’s how you do it!

1c (140g) mazyana_brand wheat (wheatberry)
2c filtered water
Pinch of salt
1T olive oil
1T sugar, optional
1t orange blossom water (or to taste), optional

For Serving
Butter
Honey

Combine water, quick cook wheat, salt and olive oil in a sauce pan. Bring to boil, reduce to simmer and cook, covered, for about 10 minutes until the wheat is tender and most of the water has been absorbed. Add milk along with sugar, if using. Bring to boil, reduce to simmer and cook uncovered, stirring occasionally, until the mixture is creamy. Add orange blossom water and stir, if using. Serve with butter, honey or the condiments of your choice.

Pro Tips:
The quick cook wheat is less starchy and as such it may absorb the milk without being completely creamy. If this happens, let the mixture rest for a few minutes before adding an additional 1/2c of milk. Cook over medium heat stirring constantly until desired consistency is achieved.

If using regular wheat berry, soak the wheat in cold water overnight. The next day drain and proceed with the recipe. The wheat will need to be cooked in a larger quantity of water for 30-40 minutes until tender.
