After sharing yesterday’s video where I burnt the tangia, we had a very successful remake.

Cooked in a clay tangia pot known as a kaloucha, it’s traditionally cooked in ashes from a wood burning fire.  Instead of wood I used atlasoliveoil charcoal which a by product of making Moroccan olive oil.  The results:  unbelievably tender meat cooked in preserved lemon, olive oil, cumin, garlic and saffron.
