## Caption

Sharing my Kamama (Djaj bil Assal) or Chicken with Caramelized Onions & Honey video this past week was a beautiful reminder of why I share the content I do.  ⁣
⁣
Not only was it an opportunity to share this spectacular recipe with the world - but, it sparked conversion around the origin of the dish, regional differences in preparation and seemed to evoke beautiful memories for many people.  ⁣
⁣
For me, this is a very special recipe.  It’s one of the first Moroccan dishes I made at home that “wow-ed” me.  I’ve made this dish for countless dinner parties over the past 17 years as it’s one of the finest examples of the Moroccan kitchen in my opinion.  Outside of Claudia Roden’s book, Arabesque, I had never seen this recipe in Morocco or any other cookbook.  I wasn’t entirely sure it was actually an authentic Moroccan recipe until recently.  ⁣
⁣
I’ve learned that many people in Fes, Meknes, Rabat and Marrakech know this dish.  In Marrakech it seems to be done mostly with meat, not chicken.  And, in Rabat - it’s known as Kawarma.  ⁣

I picked a few comments that were left on my posts to share what some of my followers had to say about their own experiences with the dish.

I also included a quote in the photo carousel from Claudia Roden on this dish.  It’s one of my favorite quotes to describe the degree to which something should be cooked.  It lives in my head rent free.⁣
