Mocktail Time!  Grapefruit Mint Sparkler Anyone?  #sponsored #ad 

I’m partnering with sparklingice to create a mocktail that pairs perfectly with a recipe given to me by missionfoodsus - the results, delicious.  Get both recipes below!

Grapefruit Mint Sparkler 
1/4c sugar 
1/4c filtered water
1 large spring fresh mint 
1oz fresh lime juice
2oz fresh grapefruit juice
4oz grapefruit sparklingice 

For the simple syrup:  In a small saucepan, combine the water, sugar and mint.  Bring to boil, reduce to simmer and cook until sugar has dissolved.  Remove from heat and let stand for 15 minutes to let mint infuse.  Remove mint.  

For the mocktail, combine 2t of mint simple syrup with lime juice and grapefruit juice in a glass filled with ice.  Top with grapefruit sparkling ice and enjoy!  

Summer Grilled Chicken Wrap 
 
12 Mission® Super Soft Flour Tortillas
1 1/2 lb boneless, skinless chicken breasts
2 tbsp olive oil
2 tbsp lemon juice
4 tsp store-bought barbecue seasoning blend
3 ears corn, husks and silks removed
2 red peppers, halved
1 red onions, sliced into rounds
3/4 cup barbecue sauce, divided
1 head leaf lettuce, leaves separated
1/2 cup mayonnaise
2 tbsp Dijon mustard
  
Instructions
Toss chicken with oil, lemon juice and barbecue seasoning mix. Grill chicken for 4 to 5 minutes per side or until chicken is grill marked. Baste chicken with 1/2 cup barbecue sauce, grilling and turning chicken for 3 to 4 minutes or until chicken is golden brown, cooked through and instant-read thermometer inserted in center reads 165°F. Let rest for 5 minutes and thinly sliced across the grain.

Meanwhile, grill corn for 12 to 15 minutes or until charred and tender all over. Grill red peppers and onions for 2 to 3 minutes per side or until charred and tender. Cool slightly. Slice corn kernels off cob. Slice peppers and onions.   

Whisk together mayonnaise, remaining barbecue sauce and mustard until blended.  Assemble lettuce, chicken and grilled veggies in warm tortillas with secret sauce.
