Moroccan Kebab or Qotban:  Marinated Meat Skewers Grilled To Absolute Perfection.  You’ll find this traditional street food throughout Morocco, but it couldn’t be easier to make at home.  ⁣
⁣
2.25 lbs boneless leg of lamb cut into 1” cubes⁣
1 medium onion, finely grated
1/4c fresh parsley, finely chopped ⁣
1/4c fresh cilantro, finely chopped ⁣
1.5t ground cumin⁣
1.5t ground paprika⁣
.5t ground black pepper ⁣
3T atlasoliveoil Olive Oil
Salt to taste⁣
Skewers (pre-soaked if using wooden skewers⁣
⁣
In a large bowl, combine lamb, parsley, cilantro, cumin, paprika, black pepper, olive oil and salt.  Mix until the lamb is evenly coated.  Cover the bowl and refrigerate for at least 2 hours allowing the flavors to infuse into the meat.⁣

When you’re ready to grill, prepare the grill and thread the marinated lamb pieces onto the skewers leaving no space between each piece.⁣
⁣
Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness. Once cooked, remove the skewers from the grill and let them rest for a few minutes.⁣

Enjoy in a sandwich or on their own and always alongside mint tea!⁣
