🍷 It’s always so lovely to whip something special for the gals. 

For dinner, I was craving the freshness of spring. So I made a seared golden-crusted green goddess chicken, paired it with a crisp Caesar salad, and a vibrant mint watermelon salad. 

In the spirit of casual hosting, she came with the perfect sides: roasted Brussels sprouts and silky mashed potatoes.

🤍 Here’s what you need to make this at home:

Green Goddess Chicken:
1 lb chicken thighs
1 cup basil olive oil
1 lemon (juice & zest)
2 sprigs of basil
3 sprigs of parsley
3 sprigs of rosemary
4 spring onions
2 large garlic cloves
1 tsp dijon mustard
2 tsp parmesan (grated)
salt & pepper to taste

Caesar salad:

For a homemade touch, I followed chefreillymeehan Caesar dressing recipe from his cookbook “A little bit extra.”

Salad:
1 lb romaine lettuce
1/4 cup parmesan (grated)
freshly cracked black pepper
Croutons:
1 tsp Italian seasoning
1 tsp olive oil
2 cups sourdough bread (torn or cubed)

Watermelon mint salad:
2 to 3 cups watermelon (cubed)
2 sprigs of mint
1 tsp of agave
1/2 lime

🌷Green Goddess Chicken:

Blend basil, parsley, rosemary, lemon juice and zest, garlic, parmesan, spring onion, Dijon, and basil olive oil in a food processor.

Blend until a smooth green goddess sauce forms. Set aside until ready to use

If no food processor, finely chop herbs, onion, and garlic, combine with other ingredients in a jar, and blend with an immersion blender.

Preheat oven to 375 F

Season chicken with salt and pepper. Place skin-side down in a pan to crisp. 

Once crisp, remove the chicken thighs from the pan and set them aside. 

Let the pan cool slightly, then add 1/4 cup of sauce to the bottom of the pan. 

Place the chicken thighs over the sauce, and coat each chicken thigh with the green sauce. 

Place the pan in the oven and bake for 20 to 30 minutes, or until the chicken reaches 165 F and a golden brown crust forms. 

Serve and top with fresh parmesan
